El Farallón is widely regarded as one of the most visually dramatic dining experiences in Mexico — a cliffside restaurant carved directly into the rock face of the Waldorf Astoria Pedregal, with stone terraces that hang over the crashing Pacific below. The concept is simple and singular: walk up to the illuminated shaved-ice display, let the culinary guide walk you through the day's local catch, choose your fish, and watch it grilled over open flames as the sun drops into the ocean.
Getting there is part of the ritual. Guests pass through the private Dos Mares tunnel — a torch-lit passage bored straight through the mountain — before emerging on the cliff face above the sea. The restaurant is not accessible by car from outside the hotel grounds, which is precisely why the arrival feels like stepping into somewhere completely removed from the rest of Cabo.

Walk up to the illuminated shaved-ice display where an expert culinary guide presents the day's local catch — Red Snapper, Bluefin Tuna, Sea Bass, Amberjack, and others depending on the season. You select your fish and it's prepared to order.

Complimentary soup course — often traditional seafood Pozole or a rotating seasonal preparation from the kitchen.
Trio of Appetizers
A rotating trio of small plates — typically fresh ceviche preparations, aguachile, or other Baja coastal starters showcasing the day's catch.
Your Selected Catch — Grilled Over Open Flame
Your chosen fish or protein cooked over open flames by the cliff kitchen. Ribeye, Wagyu beef, and full vegetarian/vegan multi-course menus are available for non-seafood guests.

El Farallón is one of Cabo's most sought-after dinner reservations. Tables fill weeks or months in advance during peak season, and the sunset windows (5:30–6:15 PM) go first. Non-hotel guests are welcome and can book directly through OpenTable or by calling the Waldorf Astoria Pedregal. The dress code is enforced — resort elegant is the standard, and flip-flops and swimwear are not permitted.
The restaurant provides heavy blankets for after-dark dining — once the sun drops, the Pacific breeze off the water can get noticeably cool even in warmer months. Plan to stay for the full evening.
