The Restaurant
The Waldorf's flagship hacienda kitchen —
modern Mexican from breakfast to midnight.
Don Manuel's is the signature all-day restaurant at the Waldorf Astoria Los Cabos Pedregal — the ultra-luxury resort reached exclusively through the privately owned Dos Mares tunnel bored through the Pedregal mountain. Designed to mirror a warm Mexican hacienda kitchen, it serves modern Mexican gastronomy that marries ancestral techniques with contemporary Baja ingredients on a sprawling ocean-view patio ringed by white tablecloths, hanging lanterns, and fire pits just steps from the surf.
Unlike most high-end resort restaurants that open only for dinner, Don Manuel's runs an evolving culinary program throughout the day — a breakfast service widely considered the finest in Cabo, a breezy poolside lunch, a romantic family-style dinner with live musicians, and a nightly taco lounge that transforms Su Cocina into an artisan taco and rare spirits bar from 6 to 11 PM. The TRAVESÍA nine-course tasting experience is among the most ambitious culinary offerings in Los Cabos.
What Is Don Manuel's at the Waldorf Astoria Pedregal Like?
Don Manuel's is the all-day flagship restaurant at the Waldorf Astoria Pedregal — modern Mexican gastronomy, Pacific-view terrace, and the hacienda atmosphere that El Farallón's prix-fixe doesn't offer. It's accessible to non-hotel guests through the Dos Mares private tunnel.
The Menu
All day, every day — what defines this kitchen
Su Cocina — The Finest Breakfast in Cabo
House-baked pastries, homemade chorizo, chilaquiles, and made-to-order Cabo Eggs Benedict. Widely regarded as the most refined breakfast experience in Los Cabos — worth the trip to Pedregal alone.
Breezy Poolside Baja Menu
Fresh sea bass ceviches, tlayudas, poke bowls, and wood-fired Pedregal burgers. The daytime menu leans into bright, regional Baja ingredients against the ocean backdrop.
Pan-Seared Sea Bass & Chicken Pibil
Romantic fine-dining atmosphere with elevated family-style sharing plates. Signatures include Pan-Seared Sea Bass with Black-Garlic-Hibiscus Glaze and slow-braised Chicken Pibil.
Nightly Artisan Taco Lounge — 6–11 PM
Su Cocina transforms nightly into an upscale taco lounge — octopus carnitas, artisan street tacos, and a curated selection of rare Mexican spirits. A distinct experience from the main dining room.
TRAVESÍA — Nine-Course Taco & Spirit Journey
A highly exclusive, nine-course tasting installation inside Su Cocina celebrating the history and transformation of Mexico's most iconic street food, paired with rare agave spirits.
The Wine Cellar — Private Tastings
A heavy stone wine cellar on-property available for private tasting experiences featuring premium Mexican and international labels — a refined option for groups and special occasions.
Before You Go
The tunnel, the tasting, and how to book
Non-resort guests access Don Manuel's and El Farallón the same way: through the Dos Mares tunnel carved through the Pedregal cliffside. The experience begins before you sit down. Pricing is full Waldorf Astoria luxury tier — plan accordingly. Reservations are strongly recommended for all dayparts, not just dinner. Breakfast in particular fills early with hotel guests and visiting diners who make the trip specifically for Su Cocina.
Don Manuel's and El Farallón sit on the same property but serve fundamentally different experiences — El Farallón is cliffside-only seafood at sunset; Don Manuel's is the all-day Mexican kitchen. If El Farallón is fully booked, the dinner menu here is a worthy alternative. For TRAVESÍA, contact the resort directly — the experience is not bookable through standard reservation channels.
